Food and Beverage trade fair stands

At food and beverage fairs the sales conversation does not start in front of the stand, it starts at the tasting counter. So the first decision is where that counter sits: facing the aisle, or pulled into the stand? A counter facing the aisle reaches more people but the crowd blocks the frontage; a counter set back reaches fewer people but each conversation lasts longer. These are different strategies and one stand cannot do both. Technical constraints come before design in this sector. The combined load of chillers, refrigerators and cooking equipment easily exceeds the stand’s electrical supply, and that supply rating is declared to the organiser in advance. Water and drainage connections are not available on every plot in every hall, and where they exist they restrict the choice of plot. Cold storage for samples and a washing point also belong in the plan; neither can be added later. Surfaces have to be wipeable. Porous timber, textured fabric and open shelving cause problems quickly in the same area as food. For the counter top and the panel behind it we use cleanable laminate or a sealed finish, and we separate the food zone from the rest of the stand by material as well as by layout. Production is completed in our workshop in Beylikdüzü, Istanbul; the stand is fully assembled there and the plumbing and electrical connections are checked before it travels. Our own crew installs, and we handle the documents the hall regulations require along with the correspondence with the organiser.
